Lacuma and Chia Bircher Muesli

Ingredients

– 1 cup oats
– 1/3 cup chia seeds
– 1 tbsp. cinnamon
– 2 1/2 cups nut milk (you can also use half milk and half water)
– 1/3 cup yoghurt (preferably vegan, such as coconut or cashew)
– the juice of 1 large grapefruit or 2 oranges
– 1 large apple, grated
– 3 Tbsp. Soaring Free Superfood Lacuma powder
– 2 white peaches, chopped
– walnuts, toasted

Method

1. Place all the ingredients except for the peaches and walnuts into a large bowl, mix and store in the fridge for 2 – 24hrs or until the oats have softened and absorbed the excess liquid.
2. For the beetroot latte, scald the milk in a small pot, then whisk or place into a blender and blitz for a few seconds until foamy.
3. Combine the remaining ingredients in a mug, and the frothy milk and enjoy with Lacuma and Chia Bircher Muesli, topped with walnuts and white peaches.
