Golden Milk

Ingredients

-1 x 400 ml tin coconut milk (you can use nut milk if you prefer)
-1 cup (250ml) water
– 1/2 tsp cinnamon
– 1/2 tsp cardamom powder
– 1/2 tsp ginger (you can use fresh grated ginger but then I suggest reducing it to a 1/4 tsp and add more once you’ve tasted the golden milk)
– 1 Tbsp organic turmeric powder (use fresh (grated) turmeric if you have)
– 1/2 tsp cayenne pepper (optional but try it at least once, if gives a great warm zing)
– black pepper (a big pinch)
– 1/4 tsp vanilla powder or extract
– 1/2 tsp coconut oil
– 1-2 tsp Agave/ Rice malt syrup/coconut sugar or raw honey, taste and add more if desired.

Method

1.Place all ingredients into a small pot, on a medium heat. All the golden milk to simmer for 2 minutes.
2. Either have as is at this stage or place into a jug blender or nutribullet (be cautious and let it cool a bit if using a nutribullet). This will make the milk light and frothy. ALTERNATIVELY: Place all ingredients into a milk frother.

BUT it was worth it. The flavour profile on this bowl was really delicious and so I had to share (and put on 👖).
.
As its a bit cooler in Cape Town today ~ slops, shorts and hoodie temperature ~ and more of a hot oats kind or morning, the addition of warm, freshly toasted coconut and cashew + pecan & macadamia nutbutter made this tropical @theplantbaserange  porridge bowl a perfect way to start the day!

WHAT TO TAKE FROM THIS:
Consider different ways of bringing out the flavour of your ingredients in order to achieve your desired results that will allow you to taste the love you always put into your food.
. 
Like taking the time to toast nuts or spices to get out more depth and rounded flavours OR going for that ripe granadilla and a slightly greener mango so that one compliments the other, rather than both fighting for attention and losing the impact you intended in the first place.

I was in Hackney a couple weeks bacm and didn't really know where I was (I'm a bad explorer 😅) on a coffee shop hoppin mission.

I didn't accidently wander in to this gorgeous plant cafe, I RAN IN COMPLETE PEE PANIC (don't judge me, I'm not the only one).

So this is a message to all my friends (you know who you are) that want to open up a gorgeous jungle like cafe.... Make a GIANT sign, like HUGE, with flashing lights to the bathroom or you will get crazy espresso fueled customers like I was coming in, ackwardly dancing around begging for the bathroom. True story, too often 🙆🙈.

RECIPE:
Serves: 2 - 3
Prep Time: 15 minutes
Cooking time: 25 minutes
Ingredients:
- 2 garlic cloves, sliced
- 1 onion, sliced
- 1 small handful of dried lime leaves (12)
- 1 tbsp oil
- 1 tbsp Thai curry paste (optional)
- 1 tsp turmeric powder - 1 cup vegetable stock
- 1 cup water
- 1 x 400ml tin of coconut milk
- *medium sized sweet potato, chopped
- *courgettes/green veggies, chopped - *noodles - 1 small handful of fresh coriander, chopped 
Method:
1. Heat the oil in a medium sized pot 
2. Add the onion and garlic, saute until soft and translucent. 
3. Add the curry paste (if using), turmeric and lime leaves, fry for 1 minute. 
4. Add the liquid and potato, then allow the soup to simmer until the sweet potato is partially cooked. 
5. Add the remaining ingredients and cook until the pasta is al dente and the potato is fully cooked. 
6. Remove from the heat, season well with salt and the juice of 1 lime or half a lemon. Seasoning really makes the flavours POP and will taste a little boring without it, so don't be shy 💁🏼‍♀️. Also you can add a dash of soy sauce/tamari (the gluten free version) this will add complexity and depth to your soup.
7. Stir in the fresh coriander and serve.

We made the rookie mistake of not checking our times before visiting the blue mosque (on a 2 day trip) so instead of touring it's interior, we walked through the gardens that surround it before heading into the streets for a manditory turkish coffeeand some apple tea 🍏🍵☕.
